Summer on a plate

Today for dinner I made a really fresh, really simple salad. Cherry tomatoes, fresh mozzarella and salad greens (mixture of radicchio, curly endive, arugula, and lettuce) were store bought. Add some pasta, diced cucumber and fresh basil. The salad dressing is very simple. Whisk together fresh lemon juice, good olive oil (I use this), salt, pepper and some oregano. Mix well and serve. How easy is that?!

You could add some toasted walnuts or croutons for some crunch. Or skip the pasta and add Shrimp or roasted chicken for a healthier, low-carb version.
